Corn Casserole
(Someone from the PG 3rd Ward prepared this for anyone to taste during the 2008 Stake Emergency Preparedness Fair in Pleasant Grove, UT)
Ingredients:
1 lb. of ground beef
1⁄2 onion, diced
3 eggs, hard boiled & sliced
1⁄2 bag of frozen corn or 3 - 11oz cans of corn.
Minced Garlic or ½ tbsp Garlic Powder
1 hand full of black olives
Preparation:
Cook the meat, the onion and the garlic, until the meat turns brown; boil the corn in water till corn is well cooked if frozen; strain the corn and crush it in the blender to create little chunks (not pureed). In a oven safe 9 x 13 pan, put the ingredients in one at a time in layers. Half of all the corn, the meat, the olives, the sliced eggs and then the remainder of the corn over the top and dust the top with sugar. Bake at 400º until the top is golden brown.
