Crock Pot Caramel Rice Pudding
(Linda Winegar prepared this for anyone to taste during the 2008 Emergency Preparedness Fair in Pleasant Grove, UT)
Ingredients:
3 cups cooked white rice
1 tsp. vanilla
13.4 oz. can dulce de leche / condensed milk
12 oz. can evaporated milk
3 Tbsp. brown sugar
1/4 tsp. salt
1/2 tsp. ground cinnamon
1/2 cup raisins (optional)
Preparation:
Spray inside of 3 quart crock pot with nonstick cooking spray. Combine all ingredients in crock pot. Cover and cook on low for 3-4 hours or until liquid is absorbed and mixture is thickened. Stir well. Serve warm. 8 servings
Cook Time: 4 hours
