Old Fashioned Raisin Cake
(JoAnn Boyer prepared this for anyone to taste during the 2008 Emergency Preparedness Fair in Pleasant Grove, UT)
Ingredients:
1 cup raisins
2 cups all-purpose flour or whole wheat flour
2 ½ cups water
2 tablespoons of corn starch
1 teaspoon baking soda
dash of salt
½ cup butter, melted
1 teaspoon baking powder
1 cup sugar
½ teaspoon ground cloves
2 eggs
½ teaspoon cinnamon
1 teaspoon vanilla extract
½ cup nuts (optional)
Preparation:
Boil raisins in water for 20 min.
Strain & measure 1 cup of Raisin water.
Add baking soda to raisin water. (You’ll see a great reaction here)
In a large mixing bowl, cream butter and sugar and eggs until light and fluffy.
Add raisin water, mix and add dry ingredients.
Add vanilla and nuts.
Mix well and Bake @ 325 degrees
Cook Time: 35 minutes.
